Strawberry Pie Enchiladas

  • Homemade Strawberry Pie Filling (alternative: 1 can of 21-ounce strawberry pie filling)
  • 6 8-inch Flour Tortillas
  • 1 teaspoon Ground Cinnamon
  • 1/2 cup Butter
  • 1/2 cup Sugar
  • 1/2 cup Brown Sugar
  • 1/2 cup Water

For the Homemade Strawberry Pie Filling:

  • 1 pound Fresh Strawberries (tops removed, divided)
  • ¾ cup Sugar
  • 1/2 cup Boiling Water
  • 3 tablespoons Cornstarch
  • 1 teaspoon Vanilla Extract

Instructions

  1. Preparation: Start by preheating your oven to 350°F (175°C) and butter a 9 x 13-inch baking dish.
  2. Make the Filling: Puree 1 ½ cups of strawberries with sugar, boiling water, and cornstarch until smooth. Boil for 3 minutes with constant stirring. Remove from heat, mix in vanilla, and add the remaining sliced strawberries.
  3. Assemble Enchiladas: Soften the tortillas in the microwave if needed. Spoon about 1/4 cup of filling onto each tortilla, roll up, and place seam side down in the baking dish.
  4. Create the Sauce: In a saucepan, combine butter, white sugar, brown sugar, and water. Bring to a boil, then simmer for 3 minutes with continuous stirring.
  5. Final Touches: Pour the sauce over the enchiladas, sprinkle with cinnamon, and let them stand for 45 minutes. Bake for 20 minutes or until golden brown.
  6. Serve and Enjoy: Serve warm, ideally with vanilla ice cream or whipped cream, and top with strawberry syrup for extra sweetness.
