- 2 pounds carrots, rinsed and quartered lengthwise
- 5 tablespoons unsalted butter
- 4 garlic cloves, minced
- 2 tablespoons honey
- 1/4 teaspoon salt
- 1/4 teaspoon fresh ground pepper
- Chopped fresh parsley, for garnish
Instructions
- Preparation: Begin by preheating your oven to 425°F (220°C). Lightly oil a baking sheet and set it aside.
- Prepare the Carrots: Lay the rinsed and quartered carrots on the prepared baking sheet, ensuring they’re evenly spaced.
- Make the Glaze: In a saucepan, melt the butter over medium heat. Add the minced garlic and cook until lightly browned. Remove the saucepan from the heat, stir in the honey, and whisk to combine well.
- Coat the Carrots: Brush the carrots with the honey garlic butter mixture, making sure each piece is well coated. Season with salt and pepper.
- Roast: Place the carrots in the preheated oven and roast for 15 minutes or until tender, turning once halfway through the cooking time.
- Garnish and Serve: Before serving, garnish the carrots with freshly chopped parsley for a pop of color and freshness.
