Honey Garlic Butter Roasted Carrots:

  • 2 pounds carrots, rinsed and quartered lengthwise
  • 5 tablespoons unsalted butter
  • 4 garlic cloves, minced
  • 2 tablespoons honey
  • 1/4 teaspoon salt
  • 1/4 teaspoon fresh ground pepper
  • Chopped fresh parsley, for garnish

Instructions

  1. Preparation: Begin by preheating your oven to 425°F (220°C). Lightly oil a baking sheet and set it aside.
  2. Prepare the Carrots: Lay the rinsed and quartered carrots on the prepared baking sheet, ensuring they’re evenly spaced.
  3. Make the Glaze: In a saucepan, melt the butter over medium heat. Add the minced garlic and cook until lightly browned. Remove the saucepan from the heat, stir in the honey, and whisk to combine well.
  4. Coat the Carrots: Brush the carrots with the honey garlic butter mixture, making sure each piece is well coated. Season with salt and pepper.
  5. Roast: Place the carrots in the preheated oven and roast for 15 minutes or until tender, turning once halfway through the cooking time.
  6. Garnish and Serve: Before serving, garnish the carrots with freshly chopped parsley for a pop of color and freshness.
